To be honest, I don't care for many romcoms, but that being said I never gave too many a fair shot. I'm almost done watching Avatar: The Last Airbender (I watch this probably once a year.. even if it's not really anime) and so I'll get those added on my list, and send them to the currently watching so I don't forget which ones by the time I get around to the next one. Yeah I dropped SAO, it was just too much for me personally. I love video games, I love anime, I liked the premise, so no idea where SAO rubbed me wrong.
For the Fate series, Fate/Zero is the prequel, but came out after the original Fate/Stay Night (which was mediocre) and I guess Zero assumes you've been intro'd in the universe and it doesn't take long explaining things, and there are hints thrown wildly here and there. They remade Stay/Night into Stay/Night Unlimited Blade Works... which I haven't seen, but it came out after Zero, and is apparently a lot better. Chronologically, F/Z then F/SNUB or F/SN, purists will tell you "Watch the original one first, then prequel, then remake" but that's a lot of effort for mediocrity, and Zero one of my top series in it's own right. Who doesn't love historical figures fighting over religious artifacts... and murdering psycho priests?

Looking through the anime I've seen that are unique to me I'd immediately say Shin Sekai Yori. It's my third favorite anime of all time behind Hunter x Hunter (2011) and FMA:B. Suisei no Gargantia or Shigofumi are worth mentioning if you're into psychological; Fate/Zero (Prequel to Fate/Stay Night & Fate/Stay Night Unlimited Blade Works) and Nabari no Ou for action; Ben To, Space Dandy, Welcome to the NHK for comedy; Trinity Seven I just finished was pretty good even though it was ecchi, so lots of fan service in that if that's what you want.
I usually just pick random shit and hope I like it. I don't really count on other recommendations because taste is up for interpretation. Maybe you'll find something, maybe not. Good luck though c:
