Yeah the isekai genre in general tends to have the most blatant self-insert "loser gets reincarnated into another world and becomes OP" type stories. Like it's so blatant that it's designed for readers to self-insert as the MC.

But having said that, I still enjoy Top Tier Providence though. But that's a comedy with a goofy art style, so I can forgive some plot contrivances.

I think what I dislike about a lot of Japanese isekais is that they try to be serious but also wish fulfillment at the same time. For example the MC is betrayed by his classmates, becomes obsessed with revenge, and then gets an OP power and then all these NPCs fall in love with the MC for no reason. So I think it's okay to have NPCs fall in love with the MC for no reason, if it's a comedy. But when you mix that into a serious revenge story...so it's like "am I supposed to take this seriously or not". I can forgive Top Tier Providence for a lot of the plot contrivances because it's a goofy comedy and the MC is a happy-go-lucky kind of guy, but with stuff like Nidome no Yuusha the MC is a brooding emo kind of vengeful protagonist, but you still have all those plot contrivances that make you go "huh, that sure was convenient" - they would be fine in a comedy but they break immersion in a serious story.

Another example is Re:Monster, you have these women who were captured by goblins, and they fall in love with the MC (who is a goblin) for no reason. I mean that whole story just feels like a single player game with the MC just going around killing monsters and levelling up, and NPCs falling in love with him. But it takes itself so seriously, so all these unrealistic elements break immersion.

Whereas I think Konosuba is fine because it's a comedy, so I can forgive all those ridiculous plot elements because they're meant to be ridiculous.

I didn't watch all of FMAB but from what I've see it's basically a generic shounen with a generic shounen protagonist (Ed) who has a generic obnoxious shounen personality with generic shounen morality e.g. "killing is always wrong", which quickly becomes tiresome as the anime goes on. I think the more generic shounen you watch, the more you get tired of it and you want something different, because it's all filled with the same tired old tropes, that aren't very well thought out and the overall story tends to degenerate into a generic lazy "beat the bad guy" kind of plot, rather than anything interesting.

I like some of the serious Korean regressor manhwas, like MEMORIZE and I think Hero Has Returned has one of the most incredible concepts of all manga I've read. It's a slog to get there (it's revealed in chapter 63) but it's well worth it imo. It's not a generic "beat the bad guy" kind of story.

Yeah I think maybe it's because as you watch more anime, when you watch a really good anime it raises your expectations, so you can no longer enjoy average anime as much as you used to.

Or maybe it's because as we acquire more life experiences we begin to realize how unrealistic some anime tropes are and that hurts our immersion somewhat.

I don't know though. I think from the beginning I've never really enjoyed or appreciated most anime as much as real anime fans are able to.

I really enjoyed konosuba though.
